Ingredients
  

Main Ingredients

  • 1 lb ground beef or turkey
  • 1 cup uncooked white rice rinsed
  • 1 packet taco seasoning or homemade
  • 1 cup salsa or diced tomatoes
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned, drained
  • 1 cup shredded cheese cheddar, Monterey Jack, or blend
  • 2 cups broth or water
  • to taste salt and pepper

Instructions
 

  • In a large skillet or Dutch oven, cook ground meat over medium heat until browned. Drain excess grease if needed.
  • Stir in taco seasoning, corn, black beans, and salsa or tomatoes. Cook for 2 minutes to combine.
  • Add the rice and broth. Stir, bring to a simmer, cover, and cook for 18–20 minutes until rice is tender.
  • Remove the lid and sprinkle with shredded cheese. Cover for a few minutes until melted.
  • Serve with optional toppings like sour cream, avocado, cilantro, jalapeño, or lime.

Notes

Make it vegetarian by skipping the meat and doubling the beans. Use fire-roasted tomatoes for more depth. Great for leftovers and meal prep.
