taco seasoning

Instructions
In a large skillet or Dutch oven, cook ground meat over medium heat until browned. Drain excess grease if needed.
Stir in taco seasoning, corn, black beans, and salsa or tomatoes. Cook for 2 minutes to combine.
Add the rice and broth. Stir, bring to a simmer, cover, and cook for 18–20 minutes until rice is tender.
Remove the lid and sprinkle with shredded cheese. Cover for a few minutes until melted.
Serve with optional toppings like sour cream, avocado, cilantro, jalapeño, or lime.
Notes
Make it vegetarian by skipping the meat and doubling the beans. Use fire-roasted tomatoes for more depth. Great for leftovers and meal prep.
