Cheesy Ground Beef & Potato Casserole

Ingredients
  

Casserole Base

  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 4 medium potatoes, thinly sliced Can use sweet potatoes for a sweeter taste.
  • 1 medium onion, chopped
  • 2 cups shredded cheese (cheddar or your choice) Mozzarella or cheese blends can also be used.
  • 1 can cream of mushroom soup
  • 1 cup milk Add more for a creamier texture.
  • to taste salt and pepper
  • to taste garlic powder (optional)
  • as needed olive oil For cooking.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat and sauté the onions until translucent.
  • Add the ground beef to the skillet and cook until browned, seasoning with salt, pepper, and garlic powder.
  • In a large bowl, mix the cream of mushroom soup and milk until smooth.

Assembly

  • In a greased 9×13 inch baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the cheese. Repeat these layers.
  • Pour the soup mixture over the top and cover with aluminum foil.

Baking

  • Bake in the preheated oven for 45 minutes.
  • Remove the foil and bake for an additional 15-20 minutes or until the potatoes are tender and the cheese is bubbly.
  • Let it sit for a few minutes before serving.

Notes

Great paired with a simple green salad or steamed vegetables. Top with fresh herbs like parsley or chives for added flavor.
