  • 1 pound kielbasa, sliced into rounds Can be found in the deli section
  • 1 cup long-grain white rice Any long-grain variety can be used
  • 2 cups chicken broth Vegetable broth can be used for a lighter taste
  • 2 cups broccoli florets Fresh or frozen
  • 1 cup shredded cheddar cheese Plus additional for topping
  • 1 tablespoon olive oil Recommended for flavor, butter can be used instead
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions
 

Cooking the Kielbasa

  • In a large skillet over medium-high heat, add olive oil. When shimmering, add the sliced kielbasa and sauté for 5-7 minutes until browned and fragrant.

Adding Rice and Broth

  • Stir in the long-grain rice and mix well with the kielbasa. Pour in the chicken broth, add garlic powder, and season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until rice is tender and has absorbed the liquid.

Incorporating Broccoli

  • Add the broccoli florets to the rice mixture and gently fold them in. Cover the skillet again and cook for an additional 5 minutes until the broccoli is tender.

Finishing With Cheese

  • Remove the skillet from heat and stir in the shredded cheddar cheese until melted. Optionally, sprinkle extra cheese on top before serving.

Notes

Serve hot from the skillet, garnished with fresh herbs like parsley or chives. Pairs well with a green salad or crusty bread. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
