  • 2 pounds potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Preparation

  • Preheat oven to 350°F (175°C). Ensure your oven is fully heated before placing the casserole inside.
  • In a large pot, add the diced potatoes and cover with water. Bring to a boil and cook until the potatoes are tender, approximately 15-20 minutes. Drain well and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sliced sausage, cooking until the sausage is browned and the onions are translucent, about 5-7 minutes. Stir occasionally to prevent sticking.
  • In a large mixing bowl, combine the boiled potatoes, sausage mixture, sour cream, milk, garlic powder, salt, and pepper. Mix until everything is well incorporated.
  • Grease a baking dish with cooking spray or a little olive oil. Pour the potato and sausage mixture into the dish, spreading it evenly. Top with shredded cheddar cheese.
  • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown around the edges.
  • Once done, remove from the oven and sprinkle with chopped green onions before serving.

Notes

This casserole is versatile enough to impress guests while being simple enough for casual dinners with family. Best served hot, it pairs well with a simple side salad or steamed vegetables.
