Preparation

  • Peel and dice the Russet potatoes into evenly sized chunks.
  • Chop the onion and shred the cheese.

Cooking

  • Sauté the onions in butter in a large pot over medium heat until softened.
  • Add the diced potatoes and cover them with chicken or vegetable broth. Bring to a boil.
  • Reduce heat and let the soup simmer until the potatoes are fork-tender.
  • Blend a portion of the soup for a creamy texture and return it back to the pot.
  • Turn off the heat and gradually stir in the shredded cheese until melted.
