Ingredients
  

Main ingredients

  • 1 lb lean ground beef or substitute with ground turkey for a lighter version
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup water

Seasoning and Garnish

  • to taste Salt and pepper
  • optional Chopped fresh cilantro for garnish

Instructions
 

Cooking

  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  • Stir in the taco seasoning, cans of beans and corn, ready rice, and water. Mix well.
  • Bring the mixture to a boil, then reduce heat and let simmer for 5-10 minutes until heated through and water is mostly absorbed.
  • Sprinkle cheese on top and cover to let it melt, about 2-3 minutes.
  • Season with salt and pepper. Serve hot, garnished with cilantro if desired.

Notes

Serve with tortilla chips for added crunch, or pair with a fresh salad or sliced avocado for a complete meal. You can prepare ingredients ahead of time and store them separately.
