  • 5-6 cups sweet cherries, pitted, fresh or frozen thawed
  • 2-4 tablespoons granulated sugar Adjust based on cherry sweetness
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon pure almond extract
  • 2-3 tablespoons all-purpose flour 3 tablespoons if using frozen cherries

For the Topping

  • 2/3 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon pure vanilla extract
  • 1/2 teaspoon pure almond extract
  • 6 tablespoons unsalted butter, melted

For Serving

  • 1 scoop vanilla ice cream For serving

Instructions
 

Preparation

  • Preheat oven to 350 degrees F.
  • In a large bowl, gently stir together all filling ingredients.
  • Transfer the mixture to an 8x8 baking pan and spread it into an even layer.

Making the Topping

  • In a medium bowl, combine sugar, flour, baking powder, and salt for the topping.
  • Add the vanilla extract, almond extract, and melted butter; stir until fully combined.
  • Press pieces of the topping together and place them all over the top of the cherries.

Baking

  • Bake for 30-45 minutes, until the cherries are bubbling and the topping is light golden brown.
  • Cool for 20 minutes before serving with vanilla ice cream.

Notes

For a deeper flavor, consider adding a pinch of cinnamon or nutmeg to the cherry filling. Adjust the sugar according to your taste, especially if your cherries are particularly sweet or tart. Use a mix of cherries for added flavor complexity.
