Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt

Wet Ingredients

  • 0.5 cups unsalted butter, melted
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 0.75 cups milk room temperature

  • 1 cup fresh or frozen cherries, pitted and chopped

Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  • In a separate bowl, combine the melted butter, egg, vanilla extract, and milk, whisking until blended.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  • Gently fold in the chopped cherries.
  • Fill each muffin cup about 2/3 full with batter.

Baking

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Cooling

  • Let the muffins cool for a few minutes in the tin before transferring them to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze them for up to 3 months. Reheat before serving if desired.
