Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together molasses, granulated sugar, brown sugar, and vegetable oil until smooth.
  • Beat in the egg until well combined.
  • In another bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Scoop tablespoon-sized balls of dough and roll them in sugar to coat.
  • Place the cookies on a lined baking sheet, leaving space between each.
  • Bake for 8-10 minutes until they are set and the tops are crinkled.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if your kitchen is warm. Avoid overbaking for a chewy center. Fresh spices yield better flavor.
