  • 2 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation and Cooking

  • Heat a large pan over medium heat and add olive oil.
  • Season the chicken breasts with salt and pepper.
  • Cook the chicken in the pan for about 6-7 minutes on each side, or until cooked through.
  • Remove the chicken and let it rest on a plate.
  • In the same pan, add minced garlic and sauté until fragrant.
  • Pour in the heavy cream and let it simmer.
  • Stir in Parmesan cheese until the sauce thickens.
  • Add fresh spinach to the sauce and cook until wilted.
  • Slice the chicken and return it to the pan. Mix everything together.
  • Serve hot.

Notes

Serve this dish warm on its own, or over a bed of zucchini noodles or cauliflower rice for a heartier meal. Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.
