Ingredients
  

For the filling

  • 4 tablespoons taco seasoning
  • 1/2 teaspoon salt
  • 5 cups shredded rotisserie chicken Rotisserie chicken provides a quick and easy option.
  • 2 cups shredded Monterey Jack cheese
  • 2 (4 ounce) cans chopped green chiles, drained

For assembling and frying

  • 20 (6 inch) soft flour tortillas
  • Canola oil for frying Ensure the oil is hot enough for frying.

To serve

  • Sour cream, guacamole, pico, and salsa Use your favorite dips for serving.

Preparation

  • In a large bowl, stir together the taco seasoning and the chicken to coat.
  • Stir in cheese and green chiles.
  • Spoon about 1/3 cup of the chicken mixture onto the center of each tortilla, roll tightly, and secure with a toothpick.

Cooking

  • Preheat the oven to 250 degrees.
  • Heat oil in a skillet over medium heat until it reaches 375 degrees.
  • Fry flautas until golden brown on all sides, about 1 to 2 minutes.
  • Transfer to a paper towel-lined baking sheet and keep warm in the oven.
  • Serve hot with sour cream, guacamole, and salsa.

Notes

To store leftover flautas, let them cool completely, then place in an airtight container and store in the fridge for up to 3 days. Freeze for up to 2 months. Reheat in the oven at 350 degrees or use an air fryer for crispiness. You can customize flautas with different fillings like beef, pork, or vegetables.
