  • 2 pieces chicken breasts
  • 8 oz spaghetti or fettuccine
  • 1/4 cup flour for dredging
  • 3 tablespoons olive oil for cooking
  • 3 tablespoons butter for sauce
  • 1 whole lemon (juiced) freshly squeezed
  • 1/2 cup chicken broth or vegetable broth
  • 2 tablespoons capers
  • to taste salt and pepper

Instructions
 

Cooking Pasta

  • Cook pasta according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Prepare Chicken

  • Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown, about 5-6 minutes per side. Remove from the skillet and set aside.

Make Sauce

  • In the same skillet, melt the butter over medium heat. Add lemon juice, chicken broth, and capers. Bring to a gentle simmer for about 1-2 minutes.

Combine and Serve

  • Return the chicken to the skillet, cooking for an additional 2-3 minutes to warm through.
  • Toss the cooked pasta in the sauce using tongs to ensure the pasta is well coated. Serve the chicken on top and garnish with chopped parsley.

Notes

Serve hot and consider pairing with a crisp side salad or crusty bread. Freezing leftovers can be an option for later consumption.
