Preparation

  • Cut the chicken into bite-sized pieces and season them with salt and pepper.
  • In a large pot, heat the olive oil over medium heat and sauté the onion, carrots, and celery for about 5 minutes until tender.
  • Add the minced garlic and cook for one more minute until fragrant.
  • Pour in the chicken broth, then add the chicken pieces, bay leaves, and dried thyme. Bring to a boil, reduce heat, and let simmer for 20 minutes.
  • Stir in the tortellini and cook according to package directions, usually about 5–7 minutes.
  • Remove the bay leaves and taste the soup. Adjust salt and pepper as needed and stir in the parsley.
  • Ladle the hot soup into bowls and garnish with more parsley if desired.
