  • 1 cup Cooked chickpeas Canned chickpeas can be used, just make sure to rinse and drain.
  • 2 large Eggs Use more eggs as desired.
  • 1/4 cup Sun-dried tomatoes Chopped. Fresh tomatoes can be used as a variation.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.
  • 1 tablespoon Olive oil For sautéing.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add cooked chickpeas and sauté until slightly crispy.
  • Stir in chopped sun-dried tomatoes and season with salt and pepper.
  • Create a small well in the chickpeas and crack an egg into the well.
  • Cover the skillet and cook until the egg is set to your liking.
  • Serve warm.

Notes

Make sure not to overcrowd the skillet for crispy chickpeas. Use a lid while cooking to help the eggs cook evenly. Feel free to add spinach or other veggies for extra nutrition.
