  • 1/4 medium red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Preparation

  • In a large bowl, combine the chickpeas, cucumber, bell pepper, cherry tomatoes, red onion, and parsley. Mix them until they are evenly distributed.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until thoroughly combined.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or let it chill in the refrigerator for 30 minutes to enhance the flavors.

Notes

For presentation, serve in a large salad bowl surrounded by fresh greens. Best enjoyed chilled or at room temperature. Consider garnishing with crumbled feta cheese or toasted nuts for added flavor.
