Ingredients
  

Blondie Batter

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Topping

  • 1/4 cup granulated sugar for topping
  • 1 tablespoon cinnamon for topping

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, melt the butter and mix in the brown and granulated sugars until smooth.
  • Add the eggs and vanilla extract, mixing until well combined.
  • In another bowl, combine the flour, baking powder, cinnamon, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Spread the batter evenly in the prepared baking pan.
  • In a small bowl, mix together the granulated sugar and cinnamon for the topping and sprinkle it evenly over the batter.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean.

Serving

  • Allow to cool before cutting into squares and serving.

Notes

Serve these blondies warm or at room temperature. They pair well with a scoop of vanilla ice cream and are great with coffee or tea. Store in an airtight container for up to five days, or refrigerate for a week.
