  • 1 piece egg, beaten Binds everything together and creates fluffiness.
  • 1 1/2 cups all-purpose flour The base of your bread, giving it structure.
  • 1 tablespoon cinnamon Adds warm, cozy vibes.
  • 1/4 cup brown sugar Adds depth of flavor and sweetness to the swirl.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8-inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until they’re smooth.
  • Stir the melted butter right into the mashed bananas.
  • Add the vanilla extract and baking soda, then mix well.
  • Toss in a pinch of salt and sugar, then stir in the beaten egg.
  • Mix in the flour until just incorporated—don’t overmix!

Swirling and Baking

  • In a small bowl, mix the cinnamon and brown sugar.
  • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture on top, then pour in the rest of the batter and top with remaining cinnamon sugar.
  • Gently swirl the batter with a knife to create a cinnamon pattern.
  • Bake for 60-65 minutes, or until a toothpick comes out clean.
  • Let it cool in the pan briefly before transferring to a wire rack to cool completely.

Notes

For best results, use very ripe bananas. Avoid overmixing for fluffier bread. Let it cool completely before wrapping for storage.
