Ingredients
  

For the bread

  • 3 pieces ripe bananas, mashed Use ripe bananas for the best flavor and sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  • In a mixing bowl, mix the melted butter with the mashed bananas.
  • Stir in the baking soda and salt.
  • Mix in the sugar, egg, and vanilla extract.
  • Add the flour and mix until just combined.
  • In a small bowl, mix the cinnamon and brown sugar.
  • Pour half of the banana batter into the prepared loaf pan, sprinkle half of the cinnamon mixture over it, then layer the remaining batter and sprinkle the rest of the cinnamon mixture on top.
  • Use a knife to swirl the cinnamon mixture into the batter.

Baking

  • Bake for 60-65 minutes or until a toothpick comes out clean.
  • Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

You can serve this delicious bread plain, or with a drizzle of honey or a dollop of butter. It pairs well with coffee or tea. It can be stored tightly wrapped for up to 4 days or frozen for up to 3 months.
