  • 4 slices bacon, cooked and crumbled Consider using pre-cooked bacon bits for a time-saving option.
  • 1/2 cup red onion, chopped Prep the onions in advance to save time.
  • 1/2 cup cheddar cheese, shredded Sharp or pepper jack cheese can be used for an extra kick.

Dressing ingredients

  • 1/2 cup mayonnaise Greek yogurt can be used as a lighter option.
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Preparation

  • In a large mixing bowl, combine the peas, crumbled bacon, chopped red onion, and shredded cheddar cheese. Stir gently to ensure everything is well distributed.
  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper. Blend thoroughly until smooth.

Assembly

  • Pour the dressing over the salad ingredients. Toss gently, taking care not to smash the peas, until everything is thoroughly coated.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

Best served chilled. Add garnishes like crumbled bacon or fresh herbs for extra flair. Pair with grilled meats for a complete meal.
