  • 2 cups chicken broth Use low-sodium for better control of the seasoning.
  • 1 piece onion, chopped Adds depth with its slightly sweet and savory flavors.
  • 2 cloves garlic, minced Essential for adding a mellow, earthy flavor.
  • 1 tablespoon fresh ginger, grated Adjust the amount based on your taste!
  • Salt and pepper to taste Essential for enhancing all flavors.
  • chopped cilantro for garnish Adds a fresh, zesty finish.

Preparation

  • In a large skillet, heat a splash of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté for about 3-4 minutes until softened.

Cooking the Chicken

  • Add the chicken breasts and season with salt and pepper. Sear for about 5-7 minutes on each side until golden.

Simmering

  • Pour in the coconut milk and chicken broth, stirring to combine. Bring to a simmer, cover, and cook for about 15 minutes.

Preparing the Rice

  • Once the chicken is cooked, remove it and let it rest. Stir in the jasmine rice and bring to a boil.

  • Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender.

Serving

  • Slice the chicken and serve it atop the rice, garnished with cilantro.

Notes

Don't rush the sautéing to build rich flavor. Let the chicken rest for juiciness, and use fresh ingredients for the best results.
