  • 1 piece lime juiced and zested
  • 1/4 cup chopped cilantro fresh
  • 2 tablespoons olive oil for searing

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts generously with salt and pepper on both sides.
  • In a skillet, heat olive oil over medium-high heat until shimmering.
  • Add the seasoned chicken breasts to the skillet and sear on both sides until golden brown, about 3-4 minutes per side.
  • In a bowl, mix together the coconut milk, lime juice, lime zest, and chopped cilantro until well combined.

Cooking

  • Once the chicken is browned, pour the coconut mixture over the seared chicken in the skillet.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serving

  • Serve warm with rice or vegetables, garnished with additional cilantro and lime wedges.

Notes

Marinate chicken in the coconut-lime mixture for deeper flavors. Substitute chicken with thighs for a juicier option, or try grilling for different flavors.
