  • 2 cups chicken broth Low sodium or regular based on preference
  • 1 cup rice Can use white or brown rice
  • 1 lb carrots, chopped
  • 1 lb potatoes, diced Yukon gold or russet potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb chicken, shredded Cooked chicken
  • to taste Salt and pepper Adjust according to preference
  • to taste Fresh herbs (like thyme or parsley) for garnish

Preparation

  • In a large pot, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, sautéing for about 3-5 minutes until the onions turn translucent.
  • Toss in the chopped carrots and diced potatoes, stirring occasionally for another 5 minutes until they soften slightly.
  • Pour in the chicken broth, bring the mixture to a rolling boil.
  • Stir in the rice and shredded chicken, blending everything well.
  • Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice and vegetables are tender.
  • Season generously with salt and pepper to taste.
  • Garnish with fresh herbs before serving.

Notes

Serve hot in rustic bowls, pair with crusty bread or a fresh garden salad. For meal prep, store in airtight containers and enjoy leftovers by reheating.
