  • 1 lb Fresh conch Look for firm, slightly translucent conch.
  • 2 medium Tomatoes Diced.
  • 1 medium Cucumber Diced.
  • 1 medium Bell pepper Diced.
  • 1 medium Red onion Diced.
  • 2 limes Lime juice Freshly squeezed.
  • 1 orange Orange juice Freshly squeezed.
  • to taste Salt
  • to taste Black pepper
  • to taste optional Scotch bonnet peppers For extra heat.

Instructions
 

Preparation

  • Clean the conch by removing the tough outer skin.
  • Tenderize the conch with a meat mallet until soft but not mushy.
  • Slice the conch into thin strips or small cubes.
  • Dice the tomatoes, cucumbers, bell peppers, and red onion.

Mixing

  • In a mixing bowl, combine the diced conch with freshly squeezed lime and orange juices.
  • Let the mixture marinate for 5-10 minutes.
  • Add the diced vegetables, salt, pepper, and optional Scotch bonnet peppers.
  • Toss gently to mix all ingredients together.

Serving

  • Refrigerate for at least 15 minutes to let the flavors meld.
  • Serve chilled with tortilla chips or on its own.

Notes

Can be stored in an airtight container for 2-3 days. Serve preferably the same day for the best freshness.
