Ingredients
  

Dry Ingredients

  • 1/2 cup flour Regular or gluten-free flour blend can be used.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Wet Ingredients

  • 1/4 cup milk Room temperature for best blending.
  • 1 piece egg Room temperature.

Main Ingredients

  • 1 cup corn kernels Fresh or frozen.
  • 2 tablespoons chopped green onions

Preparation

  • In a medium-sized bowl, combine the flour, baking powder, salt, and black pepper. This will be your dry mixture.
  • In another bowl, whisk together the milk and egg until blended.

Mixing

  • Slowly add the wet ingredients to the dry mixture, stirring until just combined. Be careful not to over-mix; the batter should be thick enough to coat the back of a spoon.
  • Gently fold in the corn kernels and chopped green onions until evenly distributed.

Cooking

  • Heat about 1/4 inch of oil in a frying pan over medium heat (approximately 375°F).
  • Using a tablespoon, drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
  • Fry for about 3-4 minutes on each side or until golden brown and cooked through; flip when the edges are firm and bubbling.
  • Once cooked, use a slotted spoon to remove the fritters and let them drain on paper towels.

Notes

Serve hot or warm. For a great presentation, stack the fritters and garnish with extra green onions or sour cream. They can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 2 months.
