Ingredients
  

Main Ingredients

  • 1 cup corn kernels Fresh or frozen
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour
  • 1/4 cup cornmeal
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1/4 cup milk Can use plant-based milk for a vegan option
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying Approximately 1/4 inch deep in skillet

Preparation

  • In a mixing bowl, combine corn, flour, cornmeal, green onions, egg, milk, baking powder, salt, and pepper. Mix all ingredients until fully incorporated; the batter should be thick enough to coat the back of a spoon.
  • Heat oil in a skillet over medium heat. You’ll want enough oil to coat the bottom of the pan—approximately 1/4 inch deep.

Cooking

  • Drop spoonfuls of the mixture into the hot oil. Flatten them slightly with the back of the spoon to allow for even frying.
  • Fry until golden brown on both sides, around 3-4 minutes per side. Turn them carefully and watch for a crispy golden exterior; if bubbles form at the edges, that’s a great sign!
  • Once cooked, remove the fritters and drain them on paper towels to absorb excess oil.

Serving

  • Serve warm as a tantalizing side dish, garnishing with herbs or a dash of hot sauce. These fritters pair wonderfully with sour cream, yogurt, or salsa.

Notes

For a sweeter variation, try adding sugar or jalapeños. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
