Main Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 whole red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped

Dressing Ingredients

  • 1 whole lime, juiced
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Preparation

  • In a large bowl, combine the corn, red bell pepper, cherry tomatoes, red onion, and cilantro. Toss gently until the veggies are evenly distributed.
  • In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
  • Pour the dressing over the corn mixture and toss until all ingredients are well coated.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Corn salad is best served chilled. For an added touch, sprinkle extra chopped cilantro or crumbled feta cheese just before serving. Store leftovers in an airtight container for 3-4 days.
