Ingredients
  

Wet Ingredients

  • 3 large overripe bananas Make sure your bananas are very ripe for the best sweetness and flavor.
  • 1/2 cup cottage cheese Can substitute with yogurt.
  • 1/2 cup unsweetened applesauce or neutral flavored oil Use applesauce for a healthier option.
  • 1/2 cup sugar Feel free to add more sugar or a drizzle of honey for sweetness.
  • 2 large eggs Bring to room temperature.

Dry Ingredients

  • 1 3/4 cups all-purpose flour Sifted flour is recommended for a light and fluffy bread.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 180C/350F. Line a 9 x 4-inch loaf pan with parchment paper.
  • In a mixing bowl, add the mashed bananas, cottage cheese, applesauce, sugar, and eggs. Mix well until combined.
  • Add the sifted flour, baking powder, and salt to the mixture. Stir until just combined.

Baking

  • Transfer the batter into the lined loaf pan.
  • Bake for 50 minutes or until a toothpick inserted in the center comes out mostly clean. If the top browns too quickly, cover with tin foil.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Goes well with butter or cream cheese. Can be stored at room temperature for up to three days or in the refrigerator for up to a week. Freeze individual slices wrapped for about three months.
