Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese, eggs, chopped bacon, salt, and pepper. Whisk until well combined and smooth.
  • Grease a muffin tin or use silicone muffin cups.
  • Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  • Sprinkle diced vegetables on top, if using.

Cooking

  • Bake for 20-25 minutes, or until the egg bites are set and golden on top.
  • Allow them to cool slightly before removing from the tin.

Notes

Serve warm, can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 2 months.
