Ingredients
  

For the Chicken

  • 2 large chicken breasts (boneless, skinless)
  • ½ cup unsalted butter Plus additional for the sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the Pasta

  • 8 oz linguine pasta
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • ½ teaspoon crushed red pepper flakes (optional) Adjust based on spice preference

For the Sauce

  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • Freshly grated Parmesan cheese, for garnish

Instructions
 

Preparation of Chicken

  • Season the chicken breasts with salt, pepper, paprika, and onion powder.
  • Heat some butter in a large skillet over medium heat and cook the chicken until golden and cooked through, about 6-7 minutes on each side.
  • Remove the chicken and let it rest.

Cooking the Pasta

  • In the same skillet, add the linguine pasta and enough water to boil it.
  • Cook according to the package instructions until the pasta is al dente. Drain and set aside.

Making the Cowboy Butter Sauce

  • In the same skillet, lower the heat and add more butter, followed by the minced garlic.
  • Sauté until fragrant, about 1 minute.
  • Add the chicken broth, lemon juice, crushed red pepper flakes (if using), parsley, thyme, and season with salt and pepper.
  • Let it simmer for 2-3 minutes.

Combining Pasta and Chicken

  • Slice the chicken and add it back to the skillet along with the cooked linguine.
  • Toss everything together until the pasta is coated in the sauce.

Serving and Garnishing

  • Serve the Cowboy Butter Chicken Linguine hot.
  • Top with freshly grated Parmesan cheese for extra flavor.

Notes

This dish is best served warm. For a complete meal, serve with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
