  • 2 cans 2 (11 oz.) cans Southwest Corn or Mexicorn, completely drained Make sure to drain thoroughly to avoid a watery dip.
  • 1 can 1 (4 oz.) can diced green chiles Use spicy chiles for extra heat if desired.
  • 1 bunch 1 bunch green onion, chopped (6-8 large green onions)
  • 3/4 cup 3/4 cup mayonnaise
  • 1 cup 1 cup sour cream Add more if the dip thickens in the fridge.
  • 1/2 teaspoon 1/2 teaspoon garlic powder
  • 8 oz 8 oz sharp cheddar cheese Alternatively, use pepper jack cheese for a spicier version.
  • 4 strips Optional: 4 strips of bacon, cooked and crumbled Elevates the flavor of the dip.

Preparation

  • Stir all ingredients together in a large bowl.
  • Refrigerate for 6 hours.
  • Serve cold.

Notes
