Ingredients

Pasta and Meat

  • 20 oz cheese tortellini Fresh or refrigerated varieties yield the best texture and taste.
  • 1 lb steak (sirloin or ribeye) Sirloin is leaner; ribeye is more tender.

Seasonings

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Cream Sauce Ingredients

  • 2 tbsp olive oil Essential for searing the steak.
  • 4 tbsp butter Creates a creamy sauce base.
  • 5 cloves garlic, minced Adds aromatic richness.
  • 1 cup heavy cream Contributes a velvety smoothness.
  • 3/4 cup whole milk Balances the richness.
  • 1 1/4 cups parmesan, shredded or freshly grated Brings a savory flavor.

Garnishes and Options

  • Parsley, chopped (optional) Brightens the dish.
  • Red pepper flakes (optional) For a spicy kick.
  • Cracked black pepper (optional garnish) Elevates the flavor.

Instructions

Cooking the Tortellini

  • Start by boiling water in a large pot. Add a pinch of salt and the cheese tortellini. Cook according to the package instructions, typically around 3-5 minutes. Drain and set aside.

Preparing the Steak

  • Season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.

Searing the Steak

  • In a large skillet, heat the olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare or until your desired doneness. Remove the steak from the skillet and let it rest for a few minutes before slicing it into thin strips.

Making the Cream Sauce

  • In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
  • Slowly pour in the heavy cream and whole milk, stirring constantly. Allow the mixture to simmer for a couple of minutes, thickening slightly.

Incorporating the Cheese

  • Gradually stir in the parmesan until it melts and combines well with the sauce.

Combining Tortellini and Steak

  • Add the cooked tortellini and sliced steak into the sauce. Toss gently to coat everything evenly.

Seasoning and Serving

  • Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  • Once everything is heated through, plate your dish and garnish with chopped parsley and cracked black pepper if desired.

Notes

Use Fresh Ingredients: Fresh tortellini and high-quality steak will improve the flavor and texture of the dish. Don’t Overcook the Tortellini: Ensure the tortellini is cooked al dente. It will continue to cook a bit after being added to the sauce. Rest the Steak: Let the steak rest before slicing to keep it juicy.
