Preparation

  • In a large pot, melt the butter over medium heat until it’s bubbly and golden.
  • Add the garlic and onion, stirring until they become fragrant and translucent, around 5 minutes.
  • Sprinkle in the flour, stirring constantly for about 1-2 minutes to cook it out.
  • Gradually whisk in the chicken broth, eliminating any lumps until the soup base thickens.
  • Add the half-and-half and heavy cream, along with the Italian seasoning and nutmeg. Simmer gently for about 10 minutes.
  • Stir in the shredded chicken and broken lasagna noodles, continuing to simmer until the noodles are tender, about 10-12 minutes.
  • Once cooked, add in the Parmesan and mozzarella, stirring until melted and creamy.
  • Serve in bowls topped with chopped parsley and croutons.

Notes

Allowing the soup to sit for a few minutes off heat will deepen the flavors. For best results when freezing, leave out the noodles until ready to reheat.
