Main Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning Adjust to taste for spice level.
  • 2 tablespoons olive oil For sautéing.
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • to taste salt and pepper
  • for garnish Chopped parsley Optional.

Instructions
 

Preparation

  • Season chicken pieces evenly with Cajun seasoning.
  • In a large skillet, heat olive oil over medium heat.
  • Add the chicken to the skillet and cook until browned, about 5-7 minutes. Remove the chicken and set aside.
  • In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté for about 3-5 minutes or until the vegetables are softened.

Cooking

  • Stir in the rice and chicken broth; bring to a simmer.
  • Reduce heat, and add the chicken back into the skillet, mixing well.
  • Cover and let it cook for about 15-20 minutes or until the rice is tender.
  • Stir in the heavy cream and shredded cheddar cheese until creamy and well-combined.

Serving

  • Season with salt and pepper to taste. Garnish with chopped parsley if desired, and serve hot.

Notes

Cajun seasoning can be adjusted for spice. This dish can be made ahead of time and reheats beautifully. Leftovers can be stored in an airtight container for up to 3-4 days in the fridge or frozen for 2-3 months.
