Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until the onions turn translucent, about 5 minutes.

Cooking

  • Add the chicken broth, heavy cream, and thyme, stirring well. Bring to a gentle simmer.
  • Stir in the orzo and cook according to package instructions, usually around 8-10 minutes, until al dente.
  • Fold in the shredded chicken and heat through for 2-3 minutes. Season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

Make-ahead and store in the refrigerator for meal prep. Add a splash of broth when reheating if needed.
