  • In a large pot over medium-high heat, sauté the chopped onion and minced garlic until the onion becomes soft and translucent, about 5-7 minutes.
  • Add in the shredded chicken, drained corn, chicken broth, ground cumin, chili powder, salt, and pepper. Stir to combine and bring to a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.
  • Stir in the heavy cream and heat through for 2-3 minutes, ensuring the soup does not reach a boil.
  • Serve hot, garnished with crispy tortilla strips and fresh cilantro.
