  • 2 pieces chicken breasts, cooked and sliced Use rotisserie chicken for convenience.
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 2 packs ramen noodles Instant ramen works well.
  • 1 cup fresh vegetables (like spinach, carrots, and bell peppers) Mix and match vegetables as desired.
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Preparation

  • In a large pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
  • Add the chicken broth and bring it to a simmer.
  • Stir in the ramen noodles and cook according to package instructions.
  • Add the fresh vegetables and cook until tender.
  • Reduce the heat, then stir in the heavy cream and soy sauce.
  • Return the sliced chicken to the pot and heat through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with sliced green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of broth or water to help loosen the noodles and broth.
