Creamy Garlic Chicken with Gravy and Mashed Potatoes

Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream Can substitute with half-and-half for a lighter sauce
  • 2 tbsp flour Use gluten-free flour for gluten-free adaptation
  • 2 tbsp olive oil
  • 2 tbsp butter
  • to taste Salt and pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

For the Mashed Potatoes

  • 4 large potatoes, peeled and cubed
  • ½ cup milk
  • ¼ cup butter (for mashed potatoes)

Preparation

  • Boil a large pot of salted water. Add the cubed potatoes and cook for 15-20 minutes, or until tender enough to pierce with a fork. Drain and set aside.
  • Meanwhile, heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for about 5-7 minutes on each side, or until golden brown and fully cooked through. Transfer chicken to a plate and cover with foil to keep warm.

Cooking the Sauce

  • In the same skillet, melt the butter and sauté the sliced mushrooms for about 3-4 minutes until they begin to brown. Add the minced garlic and stir for another minute until fragrant.
  • Sprinkle the flour over the mushrooms and garlic, stirring well to combine. Gradually pour in the chicken broth and bring to a simmer. Cook for about 2-3 minutes or until slightly thickened.
  • Lower the heat and stir in the heavy cream. Allow it to simmer gently for another 2-3 minutes, until the sauce is thick enough to coat the back of a spoon.
  • Return the chicken to the skillet, and let it simmer for an additional 5 minutes to absorb the flavors.

Making the Mashed Potatoes

  • Mash the drained potatoes in a mixing bowl, adding milk and butter until you achieve a creamy consistency. Season with salt to taste.

Serving

  • Serve the creamy garlic chicken over the mashed potatoes, drizzling with the delicious gravy. Garnish with fresh parsley for an extra touch.

Notes

Store leftovers in an airtight container for up to 3-4 days. For freezing, portion into freezer-safe containers and store for up to 3 months. Add a splash of milk to the sauce while reheating to maintain a creamy texture.
