  • 2 large boneless, skinless chicken breasts Slice in half horizontally or pound to even thickness.
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter option.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh chopped parsley for garnish (optional)

Preparation

  • Slice chicken breasts in half horizontally or pound to even thickness. Season with salt, pepper, and Italian seasoning.

Cooking

  • Heat olive oil in a skillet over medium heat. Sear chicken until golden and cooked through, 4–5 minutes per side.
  • Remove chicken from the skillet. Lower heat, add butter and garlic, and sauté until fragrant.
  • Pour in cream and stir to deglaze the skillet. Add Parmesan and simmer until thickened.
  • Return chicken to the skillet. Simmer for 2–3 minutes to heat through and coat with sauce.

Notes

Make sure to cut the chicken evenly to ensure it cooks through at the same rate. Don't skip the step of deglazing the skillet; it adds great flavor to the sauce. For a little heat, consider adding crushed red pepper flakes.
