Pasta and Chicken

  • 8 oz whole wheat pasta Can substitute with any type of pasta
  • 1 lb lean chicken breast, diced Can substitute with shrimp or turkey

Sauce and Seasoning

  • 1 cup Greek yogurt Can substitute with sour cream or cream cheese
  • 1/2 cup grated Parmesan cheese Add more if desired
  • 4 cloves garlic, minced Fresh garlic recommended for best flavor
  • 2 tablespoons olive oil
  • Salt and pepper to taste Adjust to your preference
  • Fresh parsley for garnish Optional for garnish

Preparation and Cooking

  • Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add the diced chicken breast to the skillet, season with salt and pepper, and cook until the chicken is fully cooked and no longer pink.
  • Reduce the heat to low and stir in the Greek yogurt and grated Parmesan cheese until well combined.
  • Add the cooked pasta into the skillet and toss until all ingredients are evenly coated.
  • Serve warm, garnished with fresh parsley if desired.

Notes

This dish pairs well with a side salad or steamed vegetables. For meal prep, it can be made in larger batches.
