  • 8 oz whole wheat pasta Use any favorite pasta shape

Main Ingredients

  • 1 lb lean chicken breast, diced Make sure the chicken is cooked thoroughly
  • 1 cup Greek yogurt Can be replaced with low-fat cream cheese
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced Use fresh garlic for best flavor
  • 2 cups spinach (optional) Can include other vegetables for extra nutrition
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Cook the whole wheat pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes.
  • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Lower the heat and stir in the Greek yogurt and Parmesan cheese, mixing until well combined.
  • If using, add spinach to the skillet and cook until wilted.
  • Combine the cooked pasta with the sauce in the skillet, tossing until evenly coated.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Serve with a side salad or crusty bread for a complete meal. To store any leftovers, let the pasta cool completely, place in an airtight container, and store in the refrigerator for about 3-4 days. Reheat in a skillet or microwave until warmed through.
