  • 1/2 cup heavy cream Can be substituted with milk for a lighter version.

Instructions
 

Cooking the Gnocchi

  • Cook the gnocchi according to package instructions. Drain and set aside.

Sautéing

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Add fresh spinach and cook until wilted.

Combining Ingredients

  • Stir in the heavy cream and crumbled feta, mixing until the cheese is melted.
  • Add the cooked gnocchi to the skillet and gently toss to combine.
  • Season with salt and pepper to taste.

Notes

Garnish with extra crumbled feta or fresh herbs. Goes well with a side salad or crusty bread. Store leftovers in an airtight container in the fridge for up to 3 days and reheat with added liquid if necessary.
