  • 200 g fresh spinach Use fresh spinach for best flavor.
  • 150 g feta cheese, crumbled Adjust based on taste preference.
  • 1 cup heavy cream Can be substituted with half-and-half or coconut cream.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional) Garnish with parmesan if desired.

  • Cook the gnocchi according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the fresh spinach and cook until wilted.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the crumbled feta and cooked gnocchi, mixing well.
  • Season with salt and pepper.
  • Serve hot, garnished with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat gently, adding milk or cream if necessary to restore creaminess. For added spice, consider adding red pepper flakes when cooking garlic. Experiment with different cheeses for variety.
