  • 1 package Gnocchi
  • 2 cups Fresh spinach Frozen spinach works too, just thaw and drain well.
  • 1 cup Feta cheese Can be swapped with goat cheese or ricotta.
  • 1 cup Cream (or sour cream) Heavy cream for a richer taste.
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • optional to taste Parmesan cheese, grated For topping.

Cooking Instructions

  • Cook the gnocchi according to package instructions.
  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for about 1 minute.
  • Add spinach and cook until wilted.
  • Reduce heat and stir in cream and feta cheese until melted and creamy.
  • Add the cooked gnocchi to the skillet and toss to combine.
  • Season with salt and pepper to taste.
  • Serve warm, topped with grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 2 to 3 days. Reheat on the stovetop over low heat, adding a splash of milk or cream if it becomes too thick.
