Ingredients
  

For the Soup Base

  • 1 lb Italian Sausage Opt for sweet or spicy.
  • 1 medium Onion, chopped Sauté until golden.
  • 2 cloves Garlic, minced Add before onions finish cooking.
  • 8 oz Mushrooms, sliced Thinly sliced for even cooking.
  • 4 cups Chicken Broth Use low-sodium if preferred.
  • 14.5 oz Diced Tomatoes Fire-roasted for a smoky flavor.
  • 1 cup Heavy Cream Add at the end for creaminess.
  • 1 tbsp Italian Seasoning For classic Italian flavor.
  • Salt to taste Essential for adjustment.
  • Pepper to taste Essential for adjustment.

For Serving

  • 8 oz Lasagna Noodles Break into pieces.
  • 1 cup Parmesan Cheese, grated For stirring in and garnish.
  • 2 cups Spinach, fresh or frozen Adds nutrients and color.

Instructions
 

Preparation

  • Brown the Italian sausage over medium heat, breaking it apart as it cooks.
  • Add chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
  • Stir in sliced mushrooms and spinach, cooking until the spinach wilts, about 2-3 minutes.
  • Add the diced tomatoes, chicken broth, and heavy cream. Bring to a gentle simmer.
  • Add lasagna noodles and Italian seasoning; cook until noodles are tender, about 10-12 minutes.
  • Stir in grated Parmesan cheese and season with salt and pepper. Mix well.
  • Ladle into bowls and top with more Parmesan and fresh herbs if desired.

Notes

For best taste, brown the sausage well and taste as you go. Can substitute ground turkey for sausage.
