Main ingredients

  • 2 cups cooked chicken, shredded Preferably rotisserie chicken for convenience.
  • 1 cup cauliflower florets Can use fresh or frozen, thawed and drained.
  • 1 cup broccoli florets Can use fresh or frozen, thawed and drained.
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or mozzarella) Cheddar is recommended, but mozzarella can also be used.
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 to taste Salt
  • 1 to taste pepper
  • 1 tablespoon olive oil

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add cauliflower and broccoli, cooking until slightly tender.
  • In a bowl, combine shredded chicken, sour cream, cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  • Stir in the cooked vegetables.
  • Transfer the mixture to a greased casserole dish.

Baking

  • Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

This casserole is best served warm. Enjoy it on its own or with a side salad. For extra flavor, top with fresh herbs like parsley or chives. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat thoroughly before serving.
