  • 4 ears ears of corn, grilled and kernels removed Grill corn before removing kernels for the best flavor.
  • 1/2 cup mayonnaise Regular mayonnaise is used; consider chipotle mayo for a smoky flavor.
  • 1/2 cup sour cream Greek yogurt can be used for a lighter option.
  • 1/2 cup cotija cheese, crumbled Feta cheese can be a substitute if cotija is unavailable.
  • 1/4 cup fresh cilantro, chopped Can be omitted or added just before serving for freshness.
  • 1 unit lime, juiced
  • 1 teaspoon chili powder Adjust to taste for spice level.
  • to taste salt and pepper Season to preference.

Preparation

  • In a mixing bowl, combine the grilled corn kernels, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper. Stir until well combined, making sure the mixture is thick enough to coat the back of a spoon. This should take about 2-3 minutes.
  • Spoon the mixture into serving cups, filling each one generously. Depending on your cups, you can fill about 8 small cups or 4 larger servings.
  • Garnish with additional cilantro and a sprinkle of chili powder if desired, adding a pop of color and flavor.
  • Serve immediately, and watch as your guests enjoy every last bite!

Notes

Best served warm or at room temperature. Pair with grilled meats, tortilla chips, or a fresh salad for a complete meal.
