Ingredients
  

Pasta & Proteins

  • 8 ounces pasta (rotini or penne)
  • 1 cup cooked and shredded chicken You can use rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup corn (frozen or canned)
  • 1 cup diced bell pepper

Dressing & Seasoning

  • 1/2 cup ranch dressing For a lighter version, use low-fat ranch dressing.
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Cooking Pasta

  • Cook the pasta according to package instructions, then drain and cool.

Mix Ingredients

  • In a large bowl, combine the cooked pasta, shredded chicken, black beans, cherry tomatoes, corn, and bell pepper.
  • In a separate small bowl, mix together the ranch dressing and taco seasoning.
  • Pour the dressing over the pasta mixture and toss to coat.
  • Season with salt and pepper to taste.
  • Garnish with chopped cilantro. Serve chilled or at room temperature.
