  • 8 oz pasta of your choice

Main Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 1 cup cream cheese Softened
  • 1/2 cup Parmesan cheese, grated

Vegetables

  • 1 cup roasted red peppers, diced
  • 2 cups spinach

Seasoning and Cooking

  • to taste Salt and pepper
  • 2 tbsp Olive oil

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions, usually around 8-10 minutes. Drain and set aside.

Cooking Sausage

  • In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon, and cook for 5-7 minutes until browned and cooked through.

Making the Sauce

  • Stir in the cream cheese and grated Parmesan, cooking for an additional 2-3 minutes until melted and well combined.

Adding Vegetables

  • Fold in the diced roasted red peppers and fresh spinach, cooking for about 2-3 minutes until the spinach is wilted.

Combining and Serving

  • Add the drained pasta to the skillet with the sausage and cream cheese mixture, gently tossing until thoroughly combined. Season with salt and pepper to taste.
  • Serve hot, garnishing with extra Parmesan cheese or fresh herbs if desired.

Notes

For a healthier option, consider using whole wheat pasta. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
