  • 8 oz spaghetti or fettuccine Use your preferred type of pasta
  • 1 cup ripe tomatoes (diced) Fresh, diced tomatoes work best
  • 1 cup heavy cream For a lighter version, use half-and-half
  • 4 cloves fresh garlic (minced) Sauté until golden brown for best flavor
  • 2 tbsp extra virgin olive oil For sautéing garlic
  • 1/4 cup fresh basil (chopped) For garnish and flavor
  • to taste Salt and pepper To season the dish

Preparation

  • Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Sauté minced garlic until golden brown.
  • Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  • Lower the heat and stir in heavy cream until well blended.
  • Toss cooked pasta in the sauce until evenly coated.

Serving

  • Serve warm, garnished with fresh basil and a sprinkle of grated Parmesan cheese if desired.

Notes

To store leftovers, cool to room temperature, then store in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or cream to regain creaminess.
