  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 9 ounces package of cheese tortellini
  • 1 cup heavy cream
  • 2 cups spinach
  • to taste Salt and pepper
  • to taste Parmesan cheese for serving

Cooking

  • In a dutch oven, brown the Italian sausage over medium heat, breaking it apart as it cooks.
  • Add the diced onion and minced garlic; sauté until the onion is translucent.
  • Pour in the chicken broth and bring to a boil.
  • Stir in the tortellini and cook according to package instructions.
  • Reduce the heat, then add the heavy cream and spinach.
  • Season with salt and pepper to taste.
  • Serve hot, topped with Parmesan cheese.

Notes

Serve this soup hot in bowls. Top with freshly grated Parmesan cheese. Pair with crusty bread or a side salad for a complete meal. You can store leftover soup in the fridge for up to 3 days or freeze for up to 3 months.
